We are Alex and Kajsa, and we opened the first 100% Italian vegan restaurant in Portugal.
Even though we come from entirely different backgrounds, what united us in this endeavor was our infinite love for animals and passion for good food—the kind full of flavor, the kind from mothers and grandmothers, the kind that feels like home.
Distressed by the idea of never being able—or wanting—to enjoy the cuisine that raised me, we had the idea of putting our knowledge to work: mine in cooking (gleaned here and there) and bartending, and Kajsa’s in Gastronomic Sciences. Together, we set out to recreate the traditional dishes of my country of origin, Italy, through the lens of the vegan philosophy.
Thanks to limited economic resources—which, as we know, sharpen creativity—a solid eidetic memory for aromas and flavors, phone calls to Mama, and Kajsa’s vast knowledge of Gastronomic Sciences, we developed what we now call “The New Traditional Comfort Cuisine” – The New Traditional Home Cuisine – ProudliVegan.
At the same time, our strong desire to create something that would resonate with a wide audience, and bring people closer to veganism, led us to discover the unique advantages of vegan cuisine: INDEPENDENCE, LIGHTNESS OF MIND AND BODY, CONVENIENCE, and FREEDOM.
We realized that with a small number of accessible and inexpensive tools and ingredients, we could create our food from scratch—totally natural, cruelty-free, and incredibly tasty—without adding any obscure or unnecessary ingredients.
This has become our most effective form of activism: to tempt (in the best way) even the most skeptical eaters and prove that vegan cuisine, when made with love, (com)passion, and a sense of tradition, is full of flavor—LOTS of flavor.
Because what once began as necessity became tradition... and habits and customs should be preserved—but also evolve when needed. For tradition to endure, we must first preserve our planet Earth, the only one we have. The most meaningful step each of us can take is within reach:
